I’m trying to upload a large document right now and what I’ve noticed is there is a lack of information regarding your upload’s status. It only shows a percentage if you upload to your personal container and only in Google Chrome.
Can something be added to show the number of bytes uploaded, estimated time remaining etc when uploading to For Projects?

With the 2016-8 release that just went live, the 'Multi-File Upload' feature is now available to Internet Explorer! You can read more about this feature in the Release Notes for 2016-7 where it first shipped for Chrome & Firefox.
Currently, this feature must be enabled on a per-Enterprise or per-Project basis. Contact your VFP administrator if you're interested in switching to the new Multi-File Upload method.

It would be great to know how long is left when uploading files, is this a simple addition?

The Multi-File Upload enhancement we added in the 2016-7 release a few weeks ago provides a new way for uploading documents that shows a nice clean progress bar for users. With 2016-8, shipping soon, this capability will be available for Internet Explorer as well. Currently this needs to be turned on for your enterprise/project by our team. We're working to make this a setting that Power Admins can change in the near future.
