Able to set project specific default views separate to Enterprise Default Views - at the moment we have Enterprise View cascading across all projects

The fix for the issue you mention was released in July - this was related to the sorting order of date fields when using custom column views, which is not directly related to the suggestion made here. I've removed your post detail to avoid any confusion it might cause around this idea - please followup on issues logged with Support through our Support channels.

Yes, currently we cannot assign a default view to individual projects only - it is across all projects on our Enterprise which means if we change a default container view it effects all projects
